How to Make Delicious Pickled Beets

8 large, fresh beets
1 cup vinegar
1/2 cup sugar
1 1/2 tsp whole cloves
1 1/2 tsp whole allspice
1/2 tsp salt

Cut off the tops, leaving about 1 inch of stem intact.
Place the beets in a Dutch oven and cover them with water.
Heat the water until it comes to a boil, then reduce the heat to low and simmer the beets, covered, for 25 to 30 minutes or until they are tender.
Once the beets are cooked, remove them from the water and allow them to cool.
Peel and slice the beets, then transfer them to a clean basin or container.
In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt.
Heat the mixture until it reaches a boil, stirring occasionally. This will take about 5 minutes.
Once the mixture is boiling, carefully drizzle it over the sliced beets.
Cover the container and place it in the refrigerator for at least one hour to marinate and allow the flavors to meld together.
Before serving, drain the pickling liquid from the beets.
